Chef Luigi’s Menu of the Month September 2010
Chefs note
I have chosen Pizza Salsiccia this month and I would also like to suggest “Lambrusco Rosso” wine to accompany the dish.

| Ingredients | Measures |
| Dough ball | 1 |
| Tomato sauce | 85gr |
| Mozzarella | 75gr |
| Salsiccia | 40gr |
| Pepperonata mix | 25gr |
| Pepper | 1gr |
| Salt | 3gr |
| Oregano | pinch |
Procedures:
1. Spread dough ball to a 36cm disc
2. Place tomato sauce in the middle of the disc and spread to about 1cm from the edge
3. Spread mozzarella over tomato sauce
4. Place salsiccia over mozzarella
5. Place pepperonata in-between salsiccia
6. Season with salt, oregano and pepper
7. Bake in the oven
