Water Melon, Feta Cheese & Rocket Salad
Dear Food Lovers,
I’ve chosen this recipe to offer an alternative to the traditional method of eating watermelon (a Cypriot favourite), with Halloumi cheese.
You will find this fresh and light, yet extremely tasty!!
Ingredients:

Water Melon

Feta Cheese
|
50gr
|
Mint leaves thin sliced
|
4 leaves
|
Olive oil
|
25ml
|
Baby Rocket
|
|
| Balsamic Glazed |
|
Salt
|
|
Pepper
|
|
Method:
Cut the Water melon in square and remove any seeds.
Crumble the Feta Cheese and mix it with some olive oil and fresh black pepper.
Place the Watermelon in the plate add on the top the crumbled feta cheese with some mint leaves.
In a bowl mix the rocket with olive oil and season with salt & pepper.
Place it in the centre of the plate, decorate with Balsamic Glaze and some cress leaves.
P.S The feta can be replaced with Goats cheese, Stilton, or any salty or Spice Cheese
